1971ドン・ペリニヨンエノテークプラチナ「シャンパンの真髄大いなる熟成」ドンペリニヨンヴィンテージ1971はセラー内で過ごす醸造過程で3回目の熟成のピークに達しました。この年は乾燥した厳しい寒さの冬で、春には霜が降り、一部のブドウ畑が影響を受けました。6月の開花は厳しい条件下で、夏には頻繁に雷雨に見舞われました。葡萄の収穫は9月18日に始まりました。香りは力強く複雑で、鼻腔を包み込みます。フルーティー、ロースト、トースト、スパイシーなアロマが次々と展開し、最後には一体となって風味豊かな香りとなります。口に含んだときのさわやかさは格別で、しっかりとして、まろやかで、力強さがあります。スモークとスパイシーなバニラのニュアンスに引き立てられる気品に満ちた長い余韻は見事です。ドン・ペリニヨンエノテークは自らの手でプレニテュードと呼ばれる飛躍的な熟成の段階を経たシャンパーニュ。歳月のみに頼ることなく、酵母の力を最大限に引き出した大いなる熟成は何年かに一度ずつ、新たなる次元へと高めてくれます。また、ドンペリプラチナとは、1976年以前に作られたエノテークことです。ドンペリのなかでも特に希少で魅力的なシャンパーニュです。ドン・ペリニヨンはこちらドン・ペリニヨンエノテークはこちらドン・ペリニヨンロゼはこちらドンペリ・ゴールド「レゼルブ・ド・ラベイ」はこちら
