1975ドン・ペリニヨンエノテークプラチナ「シャンパンの真髄大いなる熟成」ドンペリニヨンエノテークヴィンテージ1975はセラー内で過ごす醸造過程で3回目の熟成のピークに達しました。気候条件は1年をとおして良好でした。春は気温が低く、発芽が遅れましたがほぼ完璧な条件下で開花に至りました。夏は、8月には幾度かの雷雨があったものの、暑く、晴天に恵まれました。葡萄の収穫は9月29日に始まり、園火は、束の間の晴天に恵まれました。最初に感ずるグレープフルーツの強いアタックはすぐに、花の香りのする蜂蜜、トーストしたへーゼルナッツ、ローストしたアロマ、エキゾチックなスパイスの香りに変化していきます。口の中に含んだワインのフレーバーは、ブーケから感じる期待通りの味わいです。とても複雑で、バランスのとれたこのワインによる古典美は極めて魅惑的です。フルーツの味わいは驚くほど長く続き、フィニッシュでは新しい皮革のアロマとジンジャーブレッドの温かみのあるアロマと混じりあいます。ドン・ペリニヨンエノテークは自らの手でプレニテュードと呼ばれる飛躍的な熟成の段階を経たシャンパーニュ。歳月のみに頼ることなく、酵母の力を最大限に引き出した大いなる熟成は何年かに一度ずつ、新たなる次元へと高めてくれます。また、ドンペリプラチナとは、1976年以前に作られたエノテークのことです。ドンペリのなかでも特に希少で魅力的なシャンパーニュです。モエ・エ・シャンドンブリュット・アンペリアルはこちらモエ・エ・シャンドンネクター・アンペリアルはこちらモエ・エ・シャンドンホワイトスターフルボトルはこちら
