【メゾン】モエ・エ・シャンドン【生産地区】フランス シャンパ−ニュ地方【タイプ】白 辛口【ブドウ品種】ピノ ノワール・シャルドネ【アルコール度】12.5％【ヴィンテージ】1998【ワイン規格】 AOC ミレジム シャンパーニュ【容 量】750ml【保存方法】10度〜18度保存ドン ペリニヨン エノテーク 1995 MHD-303「エノテーク」はドン・ペリニヨン誕生の地、オーヴィレール修道院の地下にあるセラーの名前にちなんで付けられているそうです。『ワインライブラリー』という意味を持ち、貴重なヴィンテージのキュヴェが保管されています。「世界一のワイン」をつくる。との1668年、オーヴィレール大修道院のセラーマスター、ピエール・ペリニヨン僧侶が抱いた崇高な野望。それから3世紀、この野望に限りなく忠実であるが故に生み出されたドン ペリニヨンがエノテークです。複雑性と奥深さ、様々なニュアンスを内包させるために澱を瓶内でワインと触れさせる瓶内熟成。ドン ペリニヨン エノテーク ヴィンテージ1995は澱の上で13年間熟成され、セラーで過ごす醸造過程で2回目の熟成のピークに達しました。1995年のヴィンテージは、葡萄の早熟によって特徴づけられます。1995年、春はやや曇りがちで開花は遅めでしたが、到来した猛暑によって6月末までには一気に花をつけました。夏の2ヶ月間は稀に雷雨があったほかは雨がほとんど降らず、過去30年間の中で最も高い気温でした。収穫はシャルドネが9月18日に、ピノノワールが25日に始まりました。瓶内熟成の過程で、7年以上、10年以上、30年以上の三段階の熟成のピーク（プレニチュ−ド）を迎え、その都度リリースされるエノテークは最高のぶどうと最高の醸造環境とワインに精通した醸造最高責任者の判断で選ばれます。
