1966ドン・ペリニヨンエノテークプラチナ「シャンパンの真髄大いなる熟成」およそ40年におよぶセラーでの熟成を経たドンペリニヨンエノテーク 1966は、今3回目のプレニテュードを迎えており、酵母の香りはわずかにしか感じられません。香りをかいでみると、うっとりするほど豊かなアロマに包まれ、サンダルウッド、麝香、東洋の香辛料など思いがけない香りが現れてきます。この年は例年にないいくつかの現象に見舞われました。冬の霜が葡萄に影響を与えたものの、被害はわずかで済みました。開花状態は良く、5月から8月にかけて何度も雹まじるの雨が降りました。良好な条件の下、9月22日から収穫が始まりました。最初はピーとの焼けた香りを放ち、、そしてドライアプリコットのアロマが続きます。アフターテイストはフレッシュアーモンドとオレンジの花がほんのりと香ります。口に含むと、濃厚でありながらすっきりとした味わいで、上品な滑らかな泡が口中に広がります。次第に様々な感覚に襲われます。このシャンパンは絶妙のバランスを奏でていますが、あふれんばかりの青々とした香りが、次第に驚くほどくっきりと果実の香りが長い余韻を残します。ドン・ペリニヨンエノテークは自らの手でプレニテュードと呼ばれる飛躍的な熟成の段階を経たシャンパーニュ。歳月のみに頼ることなく、酵母の力を最大限に引き出した大いなる熟成は何年かに一度ずつ、新たなる次元へと高めてくれます。また、ドンペリプラチナとは、1976年以前に作られたエノテークことです。ドンペリのなかでも特に希少で魅力的なシャンパーニュです。モエ・エ・シャンドンブリュット・アンペリアルはこちらモエ・エ・シャンドンネクター・アンペリアルはこちらモエ・エ・シャンドンホワイトスターフルボトルはこちら
