ドン・ペリニヨン エノテーク 1995についてドン・ペリニヨンは、モエ・エ・シャンドン社のプレステージ・キュヴェで、シャンパーニュが世界的に知られるスパークリング・ワインになる最初の基礎を作った有名な修道士の名であり、シャンパンのクリエイターと呼ばれています。泡を瓶に閉じ込めたシャンパンの大恩人とされるドン・ペリニヨン師の功績について様々な説がありますが、盲目で嗅覚味覚の鋭かったこの僧が各村のワインのブレンドや澄んだ白ワインの工夫などに合わせて、もともと微発泡を帯びているこの地方のワインに改良を加えて、今日のシャンパンの基礎を築いた一つの要因であります。ドン・ペリニヨン エノテークは、最も古くて貴重なヴィンテージが眠る「エノテーク」と呼ばれるセラーに貯蔵されたごくごく限られたヴィンテージだけが選ばれる大変希少なものです。その限られたヴィンテージはセラーの生で段階的に豊かさを迎える熟成のピーク「プレニテュード」に達して、進化していきます。香りは、まず軽くアニシードと生のアーモンドの香り、すぐにマンゴー、ドライフィグ、そしてトースト香が立ち、ブーケへと綺麗につながります。アロマを感じながら口にふくむと、しっかりとした味わいが印象的で、生き生きとした繊細な香りが広がります。絹のようななめらかな口当たりが徐々に、グレープフルーツ、胡椒の鮮やかな印象に変化し、余韻が長く続きます。フレッシュで生き生きとした味わいを持ち、凝縮感・崇高さ・快活さという不思議なコントラストを奏でます。ドン・ペリニヨンの熟成段階での試飲で、もっと素晴らしく熟成すると判断されたごくごく一部のものだけをさらに熟成させました。※品物によってラベルのデザインが異なるものがございます。ご理解いただきますようお願い致します。【内容量】 ：750ml【原材料】 ：シャルドネ/ピノ・ノワール【保存方法】：冷暗所
