セロスに師事したと聞くと、試さずにいられないのがシャンパン好きの悲しい性だ。ほとんどの場合は、いくつかの疑問符が頭の中を駆け回るだけで終わる。 —　期待以上の出来だった。レモンや青りんごの控えめな香り、泡のきめ細かさは普通だが、バランス感と奥行きがある。集中力も、細部の表現もセロスには及ばないが、エキスの濃さと全体を貫く硬質なミネラル感は独特のものだ。磨けば光る原石がここにはある。2日ほどおいてテイスティングしたが、へこたれた印象はなく、むしろ進化していた。本物の継承者といっていいようだ。 —　コランが畑の栽培法を有機的な方向に転換したのは2004年。除草剤は廃止し、必要最低限の薬品だけを使うリュット・レゾネに取り組んでいる。火打ち石混じりの畑のポテンシャルを完全に引き出しているとはいえない。小樽熟成は行っているものの、完璧な醸造にはほど遠いと聞いた。なにせ、2004年のブドウで初めて造ったのがこのシャンパンなのだ。にもかかわらず、デビュー戦でこれだけのインパクトを与えられるとは、並の才能ではない。死ぬまでに飲みたい30本のシャンパン山本昭彦著講談社 NV Ulysse Collin Extra Brut Blanc de Blancs les Perrieres94pt.Drink2012-2017The NV (2008) Extra Brut Blanc de Blancs Les Perrieres tastes like white Burgundy with bubbles. A compelling array of slate, gunflint, crushed rocks, white flowers and apricots bursts from the glass in this crystalline, beautifully delineated Champagne. Rich, deep and textured, yet also tightly wound, the 2008 captures the essence of the vintage. The 2008 gets better and better with time in the glass, with endless layers of fruit that build to a huge crescendo on the finish. The Perrieres is one of the most full-bodied wines I have tasted from Collin. As beautiful as this is, the Perrieres just keeps getting better and better in the glass. Shallow soils composed of clay and silex yield wines of considerable energy. Dosage was 1.7 grams per liter. This bottle was disgorged on March 6, 2012.
