単一クリュ、単一品種、単一ヴィンテージのシャンパンのみを生み出し続けてきた。 すべての条件が揃った類い稀なる年にのみリリースされるため、 これまで世に出たのは一世紀の間に30数ヴィンテージに過ぎない。 サロンはウジェーヌ・エメ自身が購入した1haの畑のほか、 契約農家が所有する19の区画の畑からシャンパンを生み出している。 これらの区画はすべてメニルの東向き斜面の中腹に位置し、陽当たりに優れ、水はけがよい。 またメニルの大きな特徴として表土が浅く、ブドウの根はすぐチョーク層の岩盤に辿り着くため、 きわめてミネラルの強いベースワインを生み出す。 しかし、このミネラルたっぷりのシャルドネは長期間の瓶内熟成を経ることで、 他のいかなるシャンパンでも再現不可能な、エレガントかつパワフル、 複雑にして生き生きとした、奥深い風味がもたらします。 容量：750ml
